Although there is no sign of summer outside my
window, the calendar reveals that that time of year is getting closer...
I did
not find it easy to stick to the plan 100% last week as I wasn't feeling
good. However I felt a real craving for vitamins and fresh fruit so found
myself tucking in to plums, apricots, melon, apples, bananas, oranges etc and
it's so nice to taste what nature is providing for us. Sometimes I am
surprised by how lovely it is to have fresh fruit – especially if you haven't
had it in a while.
So why not try the good old fruit salad and just throw in everything you
enjoy?
I have also thought about some activities I could get started on once summer
has come alive. Assuming the weather stays nice enough for long enough, I
would love to do some hiking, taking some snacks and drinks along with me and
either returning after a long walk or staying overnight somewhere before
making the way back home. I have not seen enough of the Scottish scenery and
nature since I moved here more than three years ago. Fingers crossed we will
get the odd nice weekend over the coming months.
What is your active plan for summer? Always looking for fun activities that
are not necessarily too dependent on the weather.
I am not quite there yet to buy myself the lovely summer outfits in the
stores but it is slowly getting there. As I said in one of my earlier blogs,
I try to be patient with myself and go one step at a time.
In the time I have been on the plan I have cooked a couple of meals for
friends and passed on recipes; feedbacks are all positive – people just don't
believe these are part of a diet. My current favourite dinner is the Curried
Lamb with rice and peas, my favourite lunch is the Smoked Salmon and Rocket
sandwich (which by the way can be substituted for some fresh spinach – yum).
I found that most of these meals work great with substituting some
ingredients – whether you want to use something up or just simply forgot to
buy an ingredient.
For the upcoming weekend I'm away to the cinema again, I'll pack my carrots
and houmous as I found it worked very well for me this time. I don't miss the
stale overpriced popcorn they sell at the counter. Another plan is to get a
new outfit – just to boost confidence and remind me what I am doing this diet
for. And after all I do quite a bit of walking when browsing through shops
and making my way through the city centre. Here's hoping the rain will stop
for once...
